Blueberry-Lemon Yogurt Scones

Happy Tuesday, loves! How was everyone’s weekend? I have to tell you, it sure was a relief to not spend my weekend moving or conferencing. Boyfriend and I visited our families this weekend and I spent a large amount of time snuggling Boyfriend’s baby niece and nephew and eating. I was ok with that.

I’ve got an EYHO double-feature for y’all today!

Vanilla Pudding Mix

I also made up some vanilla pudding mix recently and, whoa baby, is this stuff handy to have around! Not only is it perfect when you just really need some vanilla pudding (and fast), but you can use it in place of the boxed stuff when baking. Yep, I promise you’ll be getting a recipe suggestion here soon. 😉

  1. Well, you already know how much I love the scones (I’m looking forward to seeing how they do this weekend after being frozen) and now I’m all hot to try the pudding mix. πŸ™‚

      1. So it was kind of like a pudding cake mix deal? Interesting. Say, wonder if you could do the blueberry crumb cake with the above mentioned items. Yum. Now the brain is going over here.

At first I thought you had somehow put vanilla pudding mix into the scones and I was all “whoooaaaaaa…. what?” and then I realized that no, that is not the case. Instead there are two recipes and therefore two ways I’m going to stuff my face this weekend. Huzzah!

  3. Love the double feature! Your scones look amazing! Vanilla pudding mix is definitely something I should keep on hand….make a little banana pudding southern-style? I’m liking the things I’m feeling right now! πŸ™‚

  4. I took the pudding mix and used coconut milk (full fat) instead of regular milk, and then added about 1/2 tsp of coconut extract (found it at our local Asian market) and then some coconut. Awesome! Tasted like coconut cream pie without the crust and meringue. Yum! Plus, it was incredibly easy, which I really liked. πŸ™‚

  5. This recipe for the pudding mix sounds great! I just have to ask if there is a sugar free option or one with less sugar for those who have to watch their sugar intake?

    1. Hi Sara – I am not an expert in sugar-free recipes, so I don’t have a sugar-free option for you. My friend Carolyn over at All Day I Dream About Food is a sugar-free goddess, so you might check her site for some good recipes!
