Honey Pistachio Granola
Yield: About 6 cups of granola
  • 3½ cups gluten-free oats
  • ½ cup chopped hazelnuts
  • ½ cup shelled pistachios
  • ½ cup flax seed
  • ½ teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 1 cup raw honey
  • 3 tablespoons vegetable oil
  1. Preheat oven to 300 degrees. Line a rimmed baking sheet with parchment paper. Set aside.
  2. In a large bowl, toss together the first 6 ingredients.
  3. In a small saucepan, heat honey and oil over medium heat until just starting to simmer. Remove from heat and stir into the oat mixture, stirring to coat.
  4. Pour granola onto the prepared pan. Bake for 30-35 minutes, stirring every 7-10 minutes. Allow to cool, then package in airtight containers.
