Sun-Dried Tomato Hummus

Creamy dreamy hummus flavored with sun-dried tomatoes plus a secret ingredient: Greek yogurt!
  • 1 15-ounce can chickpeas, drained and rinsed
  • ¾ cup oil-packed sun-dried tomatoes, drained
  • 2-3 cloves garlic
  • ½ teaspoon salt
  • ½ cup Greek yogurt
  • ¼ cup tahini paste
  • Juice of 1 large lemon
  • Olive oil
  1. Place all ingredients except for olive oil in a food processor or high-speed blender. Blend until smooth. If necessary, stream in olive oil a tablespoon at a time to reach desired dipping or spreading consistency.
  2. Store in an airtight container in the refrigerator for up to a week.
