Sheet Pan  Sausage & Vegetables

Cut smoked sausage and vegetables into similar-sized pieces.

Toss with olive oil, salt, pepper, garlic powder, paprika, oregano, basil, and cumin.

Spread into an even layer on a rimmed baking sheet. Bake for 30-40 minutes, stirring halfway through.

Serve topped with parmesan and fresh herbs, if desired.
