Pickled Garlic Scapes

Prep garlic scapes


Wash, dry, and trim any dry ends off the garlic scapes. Arrange them in clean pint jars.

Add spices


Stir together whole coriander, crushed red chile flakes, and black peppercorns. Divide between the jars.

Make the brine


Boil together vinegar, salt, sugar, and water. Make sure salt and sugar dissolve.

Pour over scapes


Pour the brine over the scapes. Loosely add lids and let come to room temp. Tighten lids and put in fridge.

Rest for a week


Let the scapes rest in the fridge for a week before enjoying.
