Roast Leg  of Lamb

Place leg of lamb roast in a roasting pan. Cut slits in the meat and insert pieces of garlic cloves.

Mix together minced garlic, dried rosemary, dried thyme, sea salt, black pepper, and lemon juice.

Rub the herb mixture all over the lamb. If desired, surround lamb with small roasting potatoes.

Roast for about 20 minutes per pound, until 5-10 degrees shy of medium rare. Remove from oven, cover with foil, and rest 15-20 minutes.

Slice and serve with a mint sauce, such as mint chimichurri.
