Instructions
Heat your grill to medium heat. While grill is heating, rub the taco seasoning into both sides of the steak. Sprinkle both sides liberally with salt.
When grill is hot, place steak on grill, cooking for 3-5 minutes per side, depending on the thickness of the steak. Remove from grill and allow to rest for about 10 minutes.
To make the chunky guacamole, stir together the diced avocados, onion, jalapeños, tomatoes, and garlic, and add lime juice, salt, and cilantro to taste.
To char the tortillas, turn a gas stove burner to a medium-high flame. Place the tortilla over the flame (very carefully!), and turn with tongs when the tortilla starts to char, about 30 seconds. Wrap charred tortillas in a clean kitchen towel until ready to serve.
To serve the tacos, slice the steak against the grain into 1/4-inch slices. Allow your guests to build their tacos as they so desire!
