This was a lovely weekend. Why? Well, I’m so glad you asked.
I got to have dinner with some of my favorite people.
I got a haircut and color.
I was able to do my laundry for free (still as exciting now as it was in college).
And I got to do something I have been waiting for since high school…

I know what soundtrack I’m going to be listening to obsessively for the next week and a half…
Moving on. I am about to say something that may be a wee bit controversial. Are you ready?
I am not a huge fan of pumpkin.
(“AH! Say it isn’t so!” It’s ok, just stick with me here.)
Now, I know that the blogosphere has been full to bursting with pumpkin recipes lately, but I just can’t seem to get into them. Don’t get me wrong, I’m certainly not going to turn down a slice of pumpkin pie or a freshly baked pumpkin bar, but I just don’t dig pumpkin like I do some other fall produce.
And since there is all that talk of the great pumpkin shortage anyway, I decided to balance out all of the pumpkin recipes with some baked apples.

Any reason not to make them? Didn’t think so.

This looks GREAT! I will never tire of pumpkin, BUT, this looks soooo tempting! BTW – glad that you got to see Wicked! I am going next month (or maybe it’s November……will have to look! It’s a belated bday gift :)))) Anyways – I want to try these b aked apples :))

I’ve listened to the Wicked soundtrack obsessively for the past year ever since I saw the show for the first time. And I cried when it was over because I was sad that it was over! The apples look yummy

Made these last night, they were yummy. The only thing I will do differently next time is use a softer variety of apple, mine were a little too crisp. The Golden Delicious that you mentioned would have been ideal.
I got to see Wicked last year for my birthday!! It was a surprise from my best friend. I knew we were seeing a musical but I went way out of my way to not see what was coming to town so I could be surprised when we arrived at the theatre. Needless to say, I was overjoyed. I also cried. And… I will be making this recipe this weekend.
