Banana Bacon Pancakes

Buttermilk pancakes with slightly-caramelized slices of bananas and crumbled bacon. Top with butter and maple syrup for a savory-sweet brunch recipe that is pure perfection.

Yes, you just read that correctly: An entire week dedicated to brunch. As soon as I decided to participate in Brunch Week, I knew immediately what recipe I wanted to share on the first day. When my parents came to visit back in February for my mom’s birthday, we went out to brunch at our favorite breakfast places and she ordered a stack of banana bacon pancakes. I have to admit, I wasn’t sure about them when I heard the description, but as soon as I took a bite, it was all over. I knew I had to remake them in my own kitchen as soon as possible.

Banana and Bacon Buttermilk Pancakes
What we’ve got here is a basic buttermilk pancake recipe. Once you pour the pancake batter onto the griddle (I was aided by this handy batter dispenser from the wonderful folks at OXO to get perfectly-sized circles), lay on slices of banana and sprinkle on some cooked, crumbled bacon. When you flip the pancakes, the bananas get a little bit caramelized – combined with the tangy buttermilk pancake and the smokey bacon? Heaven on a plate. All you need is a pat of butter, a drizzle of maple syrup, and you can send me straight to Heaven.

Buttermilk pancakes with banana and bacon

Banana Bacon Pancakes

Recipe type: Breakfast
Ingredients
  • 1 cup all-purpose flour
  • ½ cup whole wheat pastry flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla
  • 4-5 strips applewood smoked bacon, cooked and crumbled
  • 2 bananas, thinly sliced
  • Butter for griddle
Instructions
  1. In a large bowl, whisk together flours, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl or large measuring cup, whisk together buttermilk, eggs, butter, and vanilla. Pour wet ingredients into dry ingredients; mix until just combined.
  3. Heat a griddle over medium-high heat. Brush heated griddle with butter, then wipe excess butter off with a paper towel. Pour batter onto griddle; top with slices of banana and crumbled bacon. Cook until bubbles form and burst on top of pancakes, about 3 minutes, then flip and cook until golden on the underside, another 1-2 minutes. Serve pancakes warm with butter and maple syrup and additional banana slices and bacon if desired.

    I don’t nearly eat enough brunch foods, I usually just eat a boring banana for breakfast, which seemed ok until I saw these bacon and banana pancakes! I’m so glad you all are doing a bunch week because I really need some fun, new brunch ideas 🙂

        I’ve been eating banana, bacon and peanut butter sandwiches my entire life. (Elvis would be so proud)
        I stumbled across a box of banana pancake mix at a local store and gave it a try unsure how a mix would taste. They were good but I’m sure this recipe that is from scratch and has real bananas will far better.
        I cooked bacon to go along with the pancakes and instead of eating it on the side, my children and I layered the bacon in between the pancakes and had nothing but clean plates left. Not to mention very satisfied tummies. I’m going to try this recipe this weekend. TGIF because I would hate for it to only Monday and have to wait all week for the opportunity to whip these up.
        In my opinion, Bacon is the Holy Grail of meats and I never met a banana recipe I didn’t like. I will give you feedback on how well my family of 5 likes them. Thank you so much for sharing this recipe.
